How To Make Aata Khajur (Thekua)?

Hello Friends aaj hum banane ja rhe hai aate ka Khajur . Khajur Bihar aur Jharkhand ki dish hai jo zyadatar chhath pooja aur teej parv me banaya jata hai Parv me jo Khajur banta hai wo Gur or Ghee me banaya jata hai Par hum Chini se bhi bana kar kha sakte hai Ye bahut hi khasta hota hai aur khane me bhi kafi tasty hota hai. To aaiye Friends  Khajur banane ke liye jin chizo ki hume zarurat hogi wo likh lete hai.

                                   INGREDIENTS.

Maida-500gm.

Suji- 150gm. (semolina)

Sugar- 150gm.

Pani- 75ml.

Ilaichi Powder- ½ Tea spoon.

Nariyal(coconut)- 25gm. (Barik kata huaa)

Kishmis- 10-12 Pieces.

Moyan kily oil-125gm.(aate me mix karne ke liye)

Beking powder -½ Tea spoon.

Oil (fry ke liye)

                                                                                                                              PREPARATION

1.Sabse pehle kisi Baratan me Sugar or pani dalkar ghulne ke liye rakh denge.

2.Ab Maida me Beking Powder aur Suji mila kar 1-2 baar chhan lenge.

3. Moyan wala jo Oil hai use garm kar ke Maida me daal kar Spoon se mila lenge kyo ki Oil garm hai to hath se milane par hath jal sakte hai.4. Ab kate huye Nariyl-Kishmis aur Ilaichi Powder bhi daal denge.

5. Jab Oil thanda ho jaye tab Pictur ke anusar dono hatho se dbate huy 5-7 minut tak mila lenge.6. Ab Pani me ghula huaa Sugar thoda-thoda dalkar Maida ko milayege.

7. Dhyan rakna hai ki pani ak baar me nahi dalna hai.

8. Thoda-thoda Sugar wala pani dalte huye milana hai lekin Aate ki tarah nai guthna hai.

9. Yha maine Khajur ke taiyar Aate ki pictur de rakhi he Aata guth kar aisa dhikhega.10. Ab gas ko on kar kadhai ko aach par rakhe aur Oil dalkar garam hone de full aach par.

11. Tab tak hum dono hatho me Khajur ka ghutha Aata lekar mutthi me daba-daba kar gol ya lambe aakar ke pitthi ki tarah bana lenge.12. Ab tak hamara Oil bhi garam ho gya hai ya nahi ye chake karne ke liye Aate ka chhota sa Tukda daal kar dekenge.

13. Oil me Aata dalte hi agar tezi se bulbule bante dhikhai de to hamara Oil Khajur fry krne ke liye garam ho chuka hai.

14. Ab pitthi ko dono hatheliyo ke beech thoda dabate huye chapta krege.

15. Aise 5-6 ban jane par Khajur ko ek-ek kar ke Oil me dhire se dale taki Oil ka chhita na ude .16. Ab aach ko midum par kar de aur baki bache Aate ki pithhi bana lenge.17. Beech- beech me kadhai me fry hote Khajur par bhi dhyan rakhenge.

18. Jab ek taraf se halka Brown ho jaye to ek-ek kar ke sare Khajur ko palat denge.

19. Aise hi thodi-thodi der par ulat palt karte hue halka Brown hone tak fry kar lenge.

20. Ab fry kiye huye Khajur ko chhalni se nikal lenge aur Newspaper par rakhte jayge taki Extra Oil Newspaper soak kar lega.

21. Aise hi sare Khajur ko hum fry kar lenge thanda hone par Airtight dubbe me rakh kar hum 15-20 din tak kha sakte hai.

Note: Moyan ko garam kar ke Maida me dalne se Khajur jyada khasta banta hai.
